Pancit estacion is a noodle dish that originated in the town of Tanza here in Cavite.
What makes this pancit different from the others is that instead of the typical rice noodles, pancit estacion uses mung bean sprouts (toge). The sauce is a strange combination of tinapa (smoked fish), kamias, atsuete (for color), and corn starch (to make the sauce thicker).
Pancit estacion is another stir-fried noodle dish like Japan’s yakiudon and yakisoba.
